    Goat cheese is a gourmet delight

    We are half way through August and it’s imperative to touch on goat cheese, as August is officially celebrated as the National Goat Cheese Month! Goat cheese is a soft cheese made from the milk of a goat whereas other cheeses are traditionally from the milk of a cow. Various types of goat cheese have different textures, making them either crumbly of spreadable – either way, we love the stuff so why not give it a try?

    What many people don’t realise are the great health benefits that come with eating and cooking goat’s cheese:

    • Low in Salt – Low salt content prevents high blood pressure or heart problems.
    • Vitamins – Provides many nutrients including vitamins B, A, and K.
    • Good Source of Protein – Great for muscular development, growth and repair.
    • Low Fat – Half the saturated fat of other cheeses and with virtually no cholesterol.
    • Low Calories – 1 ounce goats cheese is just 70 calories with a low fat percentage.

    Not only is goat cheese a healthier alternative to feed your cheese craving, it tastes great too and is a great ingredient to use when cooking.

    Delectable Goat Cheese recipes

    Goat Cheese Pies

    You will need:

    • 30 small puff pastries
    • 5 tbsp all purpose flour
    • 4 tbsp margarine
    • 2 cups milk, warm
    • 1 large egg
    • Grated Emmental cheese,
    • 200g cubed goat cheese,
    • 1 egg thinned with 1 tbsp of water
    • Pinch of nutmeg
    • Salt
    1. Preheat oven to 175C.
      Make the roux by placing the butter into a pot, in medium heat.
    2. When butter is melted, add the flour and whisk for 2 to 3 mins. Add the milk and whisk again.
    3. When the béchamel starts to thicken remove from stove and add the nutmeg, salt and the egg lightly beaten. Place over heat again and add the emmental and goat cheese. Whisk until combined.
    4. Remove from stove let it cool for 5 minutes and then fill the puff pastries. Add a dollop of filling to each puff pastry.
    5. Place in a pan covered with baking paper, coat them with the thinned egg and bake for about 20 minutes or until golden.

    Open-Face Avocado and Goat Cheese Sandwiches

    You will need:

    • 3 tbsp fresh lemon juice
    • 1⁄4 cup extra-virgin olive oil
    • 4 oz soft goat cheese
    • 1⁄8 tsp. finely ground black pepper
    • 4 ripe avocados
    • Tabasco
    • 6 small baguettes, halved and lightly toasted
    • Tomato – sliced
    • Cucumber – sliced
    • 1 tbsp freshly cracked black pepper
    • Salt
    1. Add 1 tbsp of lemon juice, black pepper, and salt to taste into a bowl, and stir. While whisking constantly, drizzle in olive oil to form a dressing; set aside.
    2. Put goat cheese, remaining 2 tbsp of lemon juice, black pepper, the flesh of the avocados, and a few dashes of Tabasco into a bowl. Lightly mash with a fork; season with salt to taste.
    3. Divide avocado mixture between the 12 baguette halves and spread to cover each. Transfer baguettes to baking sheet and broil for 1–2 minutes.
    4. Top the baguette halves with tomato and cucumber slices, and drizzle some of the cracked pepper dressing onto each and serve!

  • What is Marbling?

    Marbling adds to the desirable quality of steak cuts

    When it comes to selecting a steak, many people will look at the type of cut, grade and also the level of marbling within the meat. Marbling is the effect a piece of meat has when thin threads of fat run through the cut of meat. A good level of marbling is considered one of the most desirable qualities that a cut of meat can have.

    The steak marbling can be a result of the way the cattle are looked after. Kobe cattle for example is famous for being looked after by being massaged every day, hand fed whole grains and given beer to drink. In general, cattle fed plenty of grain have a higher chance of getting a good fat content into their flesh, ensuring a better quality of meat and a better flavour.

    Grading of steak can be affected by the amount of marbling. For example, a prime grade steak will have a very clear marbling effect where thin strips of meat are visible on the surface of the steak. A choice grade steak may have a little marbling, but as it is considered as a lower quality than prime steak, the marbling effect may be less clear or the streaks of fat may be fewer and thicker. A select grade steak is likely to have a very low or no marbling whatsoever. As this is the most basic grade of steak, marbling is rarely found in select grade meat.

    Steak marbling adds flavor and texture the steak cuts

    Marbling is usually associated with top grade steak mainly for the reason that it adds fat to the cut. As fat adds a great flavour to meat, the evenly distributed streaks of fat in a prime cut of steak add fantastic flavour and also keep it tender. When the streaks of fat are thick in the steak, they give the steak a much tougher texture.

    In terms of appearance, steak marbling is attractive to look at and is one of the best things to look for when selecting your ideal cut of steak. Steak marbling is pretty to look at, and the meat should be a bright red colour with evenly spread out strips of fat running the whole way through it. These will add more flavour and also make the connective tissues much softer to the touch.

    If you love plenty of flavour and tenderness is the deciding factor when choosing your steak, you will need to pick the right cut with the best marbling effect.   • How To Make Simple Syrup

    Sweetening drinks with simple syrup

    Simple syrup is basically a concoction of water and sugar. The mixture is heated until the sugar has melted into the water then cooled and this creates a syrupy texture which is often used as an essential ingredient for sweetening most summer cocktails and mocktails.

    Rather than using ground up sugar in cocktails, simple syrup is a much easier to mix in various beverages. So if you want to save money and also have an essential cocktail ingredient right at your fingertips, then you need to make your own simple syrup.

    You will need:

    • 2 parts sugar
    • 1 part water
    1. Start by bringing the water to a boil.
    2. Dissolve the sugar in the boiling water and keep stirring so the particles don’t settle.
    3. Once the sugar has completely melted, take the pan off the heat. Let the syrup cool and thicken, then pour into a bottle.

    This is a very basic recipe, but if you want to add something a little more interesting to your syrup, you can also try infusing it with extra flavors such as:

    • berries
    • lemon zest
    • mint
    • cinnamon
    • eucalyptus
    • banana
    • ginger
    • rosemary
    • orange
    • toffee
    • vanilla
    • jalapeno (!)

    Also, as an alternative to this recipe you could use brown/Demerara sugar instead of white sugar. This has a distinctive almost cinnamon like taste, however it will make your cocktails darker so if you wanted a bright pink creation, this will make it much darker.

    How to infuse simple syrup with other flavors

    If you were to infuse simple syrup with ginger for example, you will need to adjust the recipe very slightly. You will need:

    • 2 ounces finely sliced fresh ginger
    • 1 cup sugar
    • 1 ½ cups water
    • 1 ½ tsp black peppercorns
    1. Mix the sugar, water, ginger and peppercorns together in a medium sized saucepan over mid heat.
    2. Simmer until the sugar dissolves and stir.
    3. Continue simmering for around 30 minutes or until the syrup is very fragrant.
    4. Take off heat and cool completely. Push syrup through a fine sieve, pour into a bottle, and refrigerate.

    Why stop there? Add citrus fruits instead of peppercorns and you will have a great tasting simple syrup to mix into your beverages to serve your friends next time you have a cocktail party!

    It’s not just farmers who are growing their own fresh herbs these days, in fact, anyone with a love of gardening or food (or both) can enjoy growing and using their own herbs in fantastic new recipes. Whether it is a sweet or savory dish that needs a little garnish or just a hint of extra flavor, finishing with herbs is the best way to do it. Herbs are great for garnishing as they add flavor, freshness and a different texture to the rest of the dish.

    Basil

    Not just a great tasting herb, basil also has many health benefits. Proven to help your cardiovascular system and reduce inflammation it is also a great source of iron and Vitamin K. It comes in both dry and fresh forms, although fresher is better when it comes to cooking as it has a much more fragrant flavour. A few sprigs of fresh basil on top of a pesto-based pasta dish will beautifully compliment the basil already in the pesto!

    Chives

    Part of the onion family, chives are great herbs to finish off your culinary creation. Having been used in cooking since the Middle Ages, these are some of the oldest used herbs in the world and its multiple health benefits are a great reason to use chives in your cooking. Great for use on top of mashed potatoes, soups or macaroni cheese!

    Tarragon

    Tarragon, and more specifically French tarragon is a great herb to finish with and is usually used in fish or chicken recipes. Used as ancient medicines, it has been proven to remedy toothache, improve digestive health, and stimulate your hunger!

    Cilantro

    Cilantro or coriander as it is more commonly known is a popular herb used all over the world. It has a multitude of health benefits including antioxidants that flush out antibodies, plenty of magnesium and iron, and is known to be a great anti inflammatory aid. It not only makes a great finishing herb but is also great in spicy or tangy dishes such as salsa.

    Mint

    One of the most versatile herbs out there, mint can be used in a variety of dishes from sweet to savory and hot to cold. As a garnish and served raw and chilled, mint has a very refreshing quality which is why it is often used in cocktails or frozen in ice cubes to make summer drinks more tasty and delicious! It can be made into a sauce which goes beautifully with roast lamb and new potatoes, and is an exciting addition to any salad that needs an extra flavor to make it a bit more flavorful!
