  • 5 Ways To Make Beef Ribs

    Delightful beef ribs

    You may have been eating beef ribs all your life either at family barbecues or at a restaurant or diner – and they really are a delicious cut of meat. Although quite tough, most people like the ribs because of the marinade that goes with them and you will often see people sharing a rack of ribs as an entree as they are usually quite large.

    1) Smoked Beef Ribs

    You will need:

    • Ribs
    • Water
    • Dry rub or marinade of your choosing
    • Wood chips, such as hickory, cedar, cherry, plum, or alder

    Some barbeques have smoking compartments – keep it air tight and allow to smoke to soak into the ribs. This could take 6 to 8 hours to do – you get great results but you will be waiting a long time to eat if you’re not prepared!

    2) Oven Baked Beef Ribs

    Add your dry rub or marinade of choice then brown the ribs in a skillet with oil. Create a sauce to allow ribs to cook – you will need:

    4 tbsp. bacon drippings or olive oil
    2 onions, chopped
    3 cloves garlic, minced
    1/2 cup parsley, chopped
    3 tbsp. brown sugar
    3 tbsp. cider vinegar
    1/2 tsp. dry mustard
    1/2 cup Heinz Chili Sauce or any BBQ sauce
    2 tsp. Worcestershire sauce
    1 1/2 cups beef broth
    8-12 pearl onions, peeled
    8-12 baby carrots, chopped

    Oven bake at 325F for 90 minutes. Reduce heat to 250F, add pearl onions and carrots then bake for 1 hour more.

    3) Braised Beef Ribs

    The great thing about braised beef ribs is that everything can go into one pan – all the juices combine and soak into the meat making it tender and full of flavour.

    4) Grilled Ribs

    Marinade the ribs and wrap the rack in tin foil. Bake in oven at 300F for 2 and ½ hours then remove foil and grill for up to 8 mins.

    5) Roasted Beef Ribs

    2 garlic cloves, minced
    ½ tsp curry powder
    ½ tsp turmeric
    ½ tsp coriander
    ½ tsp paprika
    ½ tsp salt
    ½ tsp pepper
    Juice of 1 to 2 lemons

    Combine all ingredients and spread over ribs – allow to marinade for at least 1 hour. Broil in the oven for 2 and ½ hours at 325F.

    Quick Recipe for Beef Ribs

    If you don’t like waiting around but still want that beautifully tender meat, try firing up your BBQ. In your kitchen put the ribs, salt and pepper in a pot of water and place on medium heat for 15 minutes. Don’t let it boil.

    Drain water from the ribs and baste them in olive oil. Place on grill and turn until brown on both sides. Cover with BBQ sauce and grill for another 3- 5 minutes.

    These are delicious, but if you are cooking for someone for the first time and they haven’t seen you eat before, perhaps go for something a little more delicate – these beauties get very messy!

    Most of us have been to a rolling sushi bar, and although a few years back it was considered a bit of an experimental food, sushi is now becoming much more popular in the Western world – was it Samantha in the first Sex and The City movie that made it so? We’ll never know.

    A traditional Japanese dish, sushi is a combination or raw and cooked fish, rice, friend vegetables and other bite size, delicious foods which are easy to eat and very addictive. Designed to be eaten in small portions, sushi is generally served on small plates to discourage wasted food. Rather than piling your plate high with food, the idea behind sushi is just to eat what is in front of you which can be as little as a fried prawn.

    Types of Sushi

    There are hundreds of different types of sushi, but there are a few dished which are most popular in the Western world such as:

    Maki Sushi – This is undoubtedly the type of food you will think of when you think of sushi. It is usually made up of vinegar rice, plus with a vegetable or fish filling then rolled in seaweed (nori).

    Uramaki – One type of maki sushi, this is where the fillings such as fish or vegetables are wrapped in nori and then covered in rice.

    Inari sushi – Rather than using rice, this type of sushi includes tofu as its staple ingredient on the outside, and keeps the rice on the inside. It is deep fried and looks like a small pouch.

    California roll – A more Westernised version of the sushi food, the California roll is made up of cucumber, crab meat and avocado. It is made in the maki sushi style and is sometimes sprinkled with toasted sesame seeds for more texture.

    Nigiri – This type of sushi is popular with fish lovers as it is usually made up of a slice of fish such as salmon placed on wasabi, on top of a tiny portion of rice.

    Ways to Make Sushi

    Maki sushi is the most common type of sushi and is the most fun to make, so if you are keen to get started you will need:

    • Nori
    • Sushi rice
    • Fillings of choice
    • Bamboo mat
    1. Feel both sides of the sheet of nori – one will feel smoother than the other – place it on the mat in front of you with the smooth side facing down.
    2. Wet your hands and roll and handful of rice into a ball. Keep hands wet to prevent sticking. Place the ball of rice in the middle of the nori and spread it evenly all over, leaving a 2 cm gap at the top.
    3. Place one long slice of fish along the side of the nori on top of the rice with up to 3 slices of pre cut vegetables.
    4. Roll the filling tightly using the mat to hold the creation together. Keep moving forward and keep rolling then cut the sushi into 6 to 8 pieces ready to serve.

    History behind Valentine’s Day

    We all know Valentine’s Day to be the lovey-dovey sweet holiday where couples across the world decide to be extra affectionate for that one day of the year and in fact it is the most popular card-giving holiday after Christmas with over 150 million cards bought and exchanged. However, there is a lot more to it than that.

    Historically, the origin of the priest St Valentine is a little fuzzy, but there are two versions of the Valentine’s Day tradition that are most likely to be true:

    In 3rd century Rome, Valentine, a priest was living under the rule of Emperor Claudius II. Claudius declared that he only wanted single men to be part of his great armies as they made better soldiers. However, Valentine went against the emperor’s wishes and still married couples in secret. When he was found out, he was executed – a true martyr for the sanctity of love and unity.

    The other story is based around Valentine trying to protect Christians in Ancient Rome from imprisonment until he was found out and jailed himself. In prison, it is said that he fell in love with the jailor’s daughter and before he was killed, he sent a love letter signed “From your Valentine”.

    Nowadays, Valentine’s Day has evolved and it has become a very popular food based holiday. As ‘love’ is the theme of the day itself, it is no wonder that many people try and think of as many heart shaped treats they can share. Don’t give the traditional heart shaped chocolate this year – try something different with pancakes, cookies, pizza and potatoes!

    Pancakes

    Made like traditional pancakes, all you need to make them Valentine’s themed is a heart shaped cookie cutter – or you can get creative and shape it into a heart by pouring the batter yourself. Sprinkle with icing sugar and serve with forest fruits – maybe even decorate with half strawberries which can look like little hearts too!

    Clean and slice up a potato, then use a heart cookie cutter to cut out the shapes. Place the potatoes in cold water and soak for 8 hours. Drain and deep fry the potatoes until golden brown and then add them as a side dish to your romantic Valentine’s Day meal.
